Berry Shortcake

Berry Shortcake

1/4 cup brown sugar
2 1/2 cups flour
3/4 cup butter
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg, slightly beaten
3/4 cup milk
I kiwi, peeled, chopped
1/2 cup dried cherries, chopped
2 pints strawberries, hulled, cut in half
2 pints blackberries
2 pints raspberries
whipped cream and mint sprigs

In a small bowl, combine brown sugar and 1/2 cup flour. Cut in 1/4 cup butter until mixture resembles size of peas. Reserve topping. In large bowl, combine 2 cups flour, sugar, baking powder and salt. Cut in 1/2 cup butter until mix resembles coarse crumbs. Add egg and milk; stir until mixture is moist.Mix in cherries and kiwi. Spread batter in greased 9-inch cake pan; sprinkle with reserved topping. Bake at 450 degrees 18 to 20 minutes or until golden. Carefully remove from pan, cool slightly. Combine berries in bowl, sweeten to taste with additional sugar. Spoon berries over cake and top with whipped cream and mint leaves. Makes 8 servings.

 

Cilantro Ginger Chicken Skewers

12 chicken tenders
12 (8 inch) bamboo skewers
Cilantro Ginger Crust
Vegetable oil
Shredded cabbage, carrots, and red pepper
Thai peanut sauce

Skewer one chicken tender on each skewer. Roll each skewer in Cilantro Ginger Crust. On a large flat griddle, cook chicken in small amount of oil on both sides until golden brown. Place shredded vegetables on large platter, top with chicken skewers and drizzle peanut sauce on top.

Cilantro Ginger Crust - Combine 1/2 cup Panko bread crumbs, 1/3 cup pickled ginger with juice (finely chopped), and 2 tablespoons of chopped cilantro.

Saucy Mozzrella Burgers

 

Saucy Mozzarella Burgers

1 lb. ground beef
1/2 teaspoon garlic salt
1 cup shredded Mozzarella cheese
1 (8 oz.) can tomato sauce
1 (4 oz.) jar mushroom buttons, drained
1/2 teaspoon oregano
1 medium onion, cut into rings, cooked
4 hamburger buns, split and toasted

Combine meat and garlic salt. Shape into 8 thin patties. top each of 4 patties with 1/4 cup cheese and put second patty on top. Seal edges firmly. Grill to desired doneness. Heat together tomato sauce, mushrooms and oregano. Simmer 10 minutes. For each burger, spread bottom half of bun with sauce. top with beef patty, onions, additional sauce, and top half of bun.

 

Pork Chop Italiano

6 1/2 inch loin pork chops center cut
1 (.7 oz. pkg.) Italian salad dressing mix
1/4 cup plain bread crumbs
3 tablespoons vegetable oil

Combine salad dressing mix and crumbs in a large plastic bag. Add pork chops and shake to coat. In a heavy skillet, heat oil to medium-hot. Brown coated chops on both sides. Reduce heat, cook, uncovered, about 20 minutes or until tender.

Pineapple Grilled Chicken

 

Pineapple Grilled Chicken

2 (20 oz.) cans pineapple chunks in its own juice
1 cup soy sauce
2 tablespoons grated fresh ginger
4 cloves garlic crushed
3 lbs. chicken pieces

Combine pineapple chunks and juice, soy sauce, ginger, and garlic; mix well. Pour over chicken pieces. Marinate 4 hours in refrigerator, turning pieces once. Preheat grill. Drain chicken, reserving marinade. Arrange chicken pieces a few inches apart on grill. Baste chicken liberally with marinade. Cook on low heat, 1 hour or until done, turning and basting frequently.
